戸隠は1967年創業で、茹で上がりの早い細麺に工夫を重ねてきた店です。つゆはカツオ節と昆布のだしに柚子のペーストを合わせます。釜揚げうどんを基本に、そばも公式メニューに掲載。つゆにつける麺の種類と量を選び、夜の食事として組めます。
