Tea noodles and beef on a hot tile
Developed at Takase in 1962, kawara soba combines noodles made with Uji matcha and Hokkaido buckwheat with beef, shredded egg, nori, lemon and grated daikon chilli. The warm dipping sauce uses bonito and kelp with a lightly sweet flavour. One portion costs ¥1,485 including tax. The beef, egg and fish-based stock are relevant ingredients when choosing a meal; the tea-noodle name does not make it plant based.
Dipping sauce, condiments and crisp noodles
Pour the sauce into the small bowl when the dish arrives and dip noodles with their toppings. Add lemon and grated daikon chilli during the meal to change the flavour. Noodles touching the tile crisp as they heat, contrasting with the softer upper layer. The tile retains heat, allowing portions to be taken gradually. Combining egg, beef and nori in different amounts brings variety within the same dish.
Advance bookings for Honkan kaiseki
Honkan kaiseki requires at least two people and booking three days ahead, with tax-inclusive courses at ¥4,400, ¥5,500, ¥6,600 and ¥8,800. Tile-baked soba is joined by items such as sashimi, grilled and fried dishes, rice and dessert, changing with season and supply. Children’s courses for elementary pupils and younger cost ¥1,980 or ¥2,420 with two sashimi items, limited to parties ordering kaiseki and requiring the same advance booking.
A weekend lunch at the main building
Kawatana Honkan is at 5437 Kawatana and opens 11:00–15:00 on weekends and public holidays only. Its approximately century-old building overlooks a carp courtyard. The ground floor has thirty-four tatami and eighteen table seats, with sixteen table seats upstairs. It is separate from nearby Minami Honkan and the Mojiko Retro branch in Kitakyushu. Fit lunch within this shorter opening window when combining a town walk with sightseeing or hot-spring bathing.
