Sanchu Shokudo Honten continues a Tsugaru soba tradition in Watoku-machi. Its noodles, broth and longstanding setting all connect with the area’s past. It introduces a different side of local eating from apple sweets or rich niboshi ramen, broadening the food stops on a Hirosaki trip.

A Meiji-era dining tradition and a film location
Traditionally founded around 1907, the eatery stands at 164 Watoku-machi. Its roots lie in the first proprietor selling Tsugaru soba from a stall; the name refers to three family brothers whose names included Chu. The longstanding building contributes to the meal’s atmosphere. It also served as the protagonist’s family restaurant in the film Tsugaru Hyakunen Shokudo, connecting the local food tradition with its story.
Tsugaru soba prepared with time and soybean flour
Tsugaru soba uses a soybean-based binder rather than ordinary wheat flour. Here, rested sobagaki is combined with buckwheat and soybean flours, formed into noodles, boiled and rested again, then reheated to order. The preparation produces a distinctive texture alongside dried-fish and kelp broth. It offers an introduction to a regional method that differs from the emphasis on freshly cut and immediately boiled noodles elsewhere.
Curry and chuka soba alongside buckwheat noodles
This is a broader eatery rather than a soba-only specialist, also offering chuka soba and rice dishes. Its longstanding curry uses pork and onion with fish-stock flavour, served on a round silver-coloured plate. Companions can therefore choose different styles of meal. Looking at the noodles’ preparation and the use of broth turns a sightseeing lunch into an encounter with local culinary methods.
Tuesday closures and six parking spaces in Watoku-machi
Hours are 11:00–19:00, closed Tuesdays. Six parking spaces make this a smaller arrangement than the shared car parks near the station. The address is 164 Watoku-machi. Combine a noodle lunch with historic architecture in the centre before or afterwards. For an evening visit, allow for travel within the 19:00 closing time. Use the permanent main-shop address rather than confusing it with a seasonal festival stall in the park.
More places for a Hirosaki itinerary
Combine the station area and castle-town walks with trips to Mount Iwaki’s foothills and Takaoka-no-Mori, arranging the order around meals and bathing sessions.
